I am a professional chef and did the 7 day intense professional course and gained so much amazing knowledge from Stefano. Highly recommend this for chefs that cook daily to learn traditional dishes from the region. It’s nice that you sleep in the top level of the house and the class is two floors down. I will be back to gain more knowledge next time I’m in Italy.

I have been fortunate to attend cooking classes all over the world. But I had never done an immersion cooking school until our 3-day experience with Stefano Corvucci. I loved watching chefs but I always wanted more. Having a private, hands-on cooking marathon exceeded my expectations. We were able to shop, prepare and dine on the Italian favorites my family loves. And the best part, I am able to continue the experience in my own kitchen with local ingredients found in my home markets. My experience at Stefano’s home kitchen changed how we prepare & love pasta, pancetta, & parmesan. The lessons I learned by cooking with the chef, rather than just watching, resulted in a more valuable experience. I highly recommend Stefano Corvucci without hesitation.

First time I took cooking lesson with Stefano was in 2014 in the city of Bologna. It was the best ever. 7 years later (finally made it back!), I returned for another private lesson and this time in his mountain retreat. It was a totally different experience and equally exquisite!
Learn authentic cooking in a real mountain home from a historic home but with all the necessary cooking amenities to learn how to cook like his nonna to gourmet restaurant meals. Hospitality and fun while learning great cooking techniques. Last time I focused in pasta dishes. This time, I focused on meat preparations, from butchering to stock making to rabbit porchetta, lamb ragu, pigeon salmi, corattella, graicia penne and many more. Also learned about the food history and regional ingredients. Lastly, I also got to try the homemade nocino (green walnut liqueur. So yummy that I can't wait to make some at home.
Recommend to anyone who is serious about cooking and food in an authentic and fun setting. Can't wait to do it again.

I booked several classes with Chef Stefano - I had to put down a substantial security deposit. I then cancelled my classes within his 30 day policy and have not received my refund almost 2 months later.
I emailed him several times and he has not returned any emails. I called him via whatsApp and he answered - saying he was "in the garden" and that he would call me back. He never did, and hasn't returned any phone calls since.
I work in the food and beverage industry and was laid off from my job so I wanted to be especially considerate of Chef Stefano and his business during COVID so that we could come up with options for me to still come to Italy. I realize how important support of small business is. However he has clearly decided to just steal his customer's money - so stay far away! There are countless other cooking experiences in Bolonga that you can do!!!

I hope Stefano will forgive my wife and I for taking SO LONG to right this review, but when I saw the TripAdvisor ad for Bologna, it brought back to mind an exceptional day in our lives! We visited Bologna in 2012 (the date of our "visit" is incorrect for this review) for a business meeting my wife was attending, after which we were going to have a day off before returning to the States.
I searched through the brochures and internet for something to do that wasn't just "run-of-the-mill" tourist stuff, and I came across an ad for CIBO. It sounded like just what I had been searching for, so I called the number and spoke to Stefano himself. At first, he almost turned me away because they were planning on not having the cooking class the next day because he a local TV program doing a piece about CIBO, Stefano, and his two restaurants. After explaining this, he ended by saying that if we didn't mind having the TV crew interrupting our cooking lesson, he would go ahead and book us for the day. I grabbed the offer.
The following day, my wife and I arrived at the restaurant to be greeted by Stefano and shown the way to the kitchen. He introduced us to a very nice young assistant chef who would be spending the day with us, with Stefano popping up regularly as he also needed to run the restaurant. Before all that, though, he took us to the local market to choose our day's groceries. Then back to the restaurant.
With our assistant chef, we were shown how to make fresh, hand-made pasta (we made fettuccine), bolognese sauce, and even home-made tiramisu! It was fantastic, and pretty good tasting, too!
The day was split into a morning class when we prepared our own lunches, then several hours break before returning around 3:30-4:00 pm to prepare our dinner. Around 10:00 am, the local TV show came around and our "15 minutes of fame" came and went! Seriously, though, it just added a bit of spice to an already great time.
In the afternoon, Stefano spent much more time with us, and even joined us for the dinner, with much wine, laughter, and good conversation! The entire day was spectacular for both of us, from start to finish! Both my wife and I would enthusiastically recommend this program to anyone, so much so that we plan on taking another class the next time we make it to Bologna. Grazie, Stefano!

Stefano does an amazing job of making it both fun and educational. We learned to make pasta and Bolognese and from that we made both lasagna and tagliatelle with ragu. And we also made a vegetarian lasagna and baked eggplant parm.
In addition to making an amazing meal, we learned a ton about the region and the food approach in Emelia Romagna. We also met some amazing foodies in the class too. We ended up staying two extra hours enjoying the wine and the conversation. This was a real highlight of the trip!

Der Pasta Kochkurs bei Stefano war ein unglaublich interessantes, lustiges und vor allem köstliches Erlebnis. Bei wunderbar angenehmer Atmosphäre, gutem Wein und toller Musik haben wir von Stefano gelernt, wie man Pasta selbst herstellt und ein original Ragu alla Bolognese kocht. Lasagne, Ravioli und Tagliatelle, alles selbstgemacht. Es war ein unvergesslicher Gaumenschmaus. Danke an Stefano für diese tolle Erfahrung!!! Grazie e a presto!

The week I spent at the Culinary Institute of Bologna, is nothing but a mental and physical charge. Chef Stefano is an energized multitalented friendly chef, who involves you in everything from buying meat and discussing with the butcher, picking out the vegetables, smelling the cheeses -and getting everything ready to cook. And of course, on your way back from the morning round of the dive into the fantastic italien pallet of ingredients- you stop for coffee. And when strolling back with Stefano in the beautiful streets of Bologna - his hometown- you can say hello to a neighbor, a restaurant owner or the landlord of a B&B. Not just “Buongiorno” (Good morning) but “Buona giornata” (Have a nice day). At some point you want to pinch your arm to check if you have done a travel back to the times when people were more friendly to each other, or is this reality? In his kitchen you are invited into his world going back to the roots of the Emilia–romagna kitchen. And no offense- you will find out there is much more to the Italian kitchen than what you see in most Italian style restaurants filled with pasta, tomatoes, garlic, chili and olive oil. Why it is so? You would have to sign up to find out. In the course of the week I spent with Stefano, we talked about sources of food, production methods,nutrition, sustainability, history, music and various aspects of life. If you want to have a break from probably your too busy daily life, sign up for of course with Stefano and you will not be disappointed. Let go, listen carefully, be precise in execution and on time. This is much more than making ravioli. Enjoy!

What a terrific way to spend a day and wish I had more time I would have booked even more days. Stefano was wonderful. Relaxed, exceptional and passed on valuable tips to make a great meal. Completely hands on experience for the cook with clear explanations along the way. So flexible and informative. Loved the depth of his knowledge and the passion for his craft. I walked away inspired and busy planning to see when I get to join his cooking vacations- now that would be a real treat! So worthwhile and highly recommended

I am contemplating taking a 3 or 5 day course in late May. I know that professional kitchens can get pretty hot. Is anyone able to comment on the CIBO kitchen in this regard - I’m British and am not too fond of the heat. 🙄

Correct, our kitchen is the biggest in town, an open space with windows, We have a professional powerful aspiration system and AC. Nobody ever complained about heat.
I really hope to cook with you this May!

Yes Sir,
you can book a 2 or 3 Full Days course. We’ll be going to the market with your Chef Instructor every morning and you’ll decide there the menu for your cooking day.
In 3 Days we can cover all the typical traditional dishes of Bologna and Emilia Romagna, including the authentic traditional Handmade Pasta. We do not use pasta machines at Cibo,

I believe, if you dig around on the website, that the prices are listed (whole day/half day/2.5 hours) on the website.
.I may be wrong but I think it was about $120 for a 9-1:30 class. It was well worth the money for the experience.

This looks like an awesome class! We would love to take cooking classes here, but need one item clarified.
One website noted CIBO was 'permanently closed.' This was quite disappointing since all TA reviews are very recent and other websites do not indicate they are closed. Would someone please confirm that CIBO is currently open.

I've heard nothing about closing. Stefano, the head chef, just sent out his monthly email announcing that he is guest judge at a competition in England. Recipes and news but no mention of any closing. Fabulous experience! I'm routinely making my own pasta from scratch now. Not to be missed experience!

I paid 195 euros for a class from 8:30 AM to 1:00 PM. Started with a market trip. Worth every bit of the cost! Lucia was an amazing instructor. Don't skip the market trip--that was a great experience!

I wanted to send you the link to their website, but Trip Advisor does not allow that.The courses are not cheap, but well worth it. If you look on the Trip Advisor page for CIB0, there is a link that you can click on to see their site. Click on ''courses'' to get a list of the courses and the prices. You can contact them directly and ask if there is a price difference when there are children in the group.
