You can choose to stay longer at each winery, in increments of an hour. So you can stay for 2 hours at Maggie Beers if you wish. obviously the longer you stay at a winery will reduce the number of wineries that you can visit. But thats the beauty of Trail Hopper, you plan your itinerary to suit your own timings and tastes.

Just saw your question and it's probably too late now. But no. There is a certain level of wine tasting that is included, but generally $10-$25 at each vineyard will get you a better selection and/or a better standard of wine. This came as a surprise to me on the trip, but all in all, I thought it was great value for money in the end and the day was a highlight of our SA trip. The waiters/winemakers were great company. The vineyards were very generous with both their wine and their knowledge. The driver was helpful and compliant. My friends and I still talk fondly about the day. Hope this helps and not too late.
